We all know that eating fruit and vegetables brings a wealth of health benefits. Unfortunately Australians eat under the recommended five serves of vegetables a day and just scrape in on eating two serves of fruit per day. As part of Meat Free Week we encourage you to eat five serves of vegetables daily.

A diet high in vegetables has been linked with lowering the risk of colon cancer at five or more serves per day. Vegetable targets are easy to reach in delicious meat free soups.

Low fibre (serves 8) approximately 2-3 grams of fibre per serve
*Vegetarian

Ingredients

  • 50 grams short grain rice
  • 500mls of milk of your choice
  • 500mls coconut cream (or pouring cream)
  • 5 pears de seeded, peeled and thinly sliced
  • 200 gms of passion fruit pulp without seeds (strain 10 pods or buy pulp)
  • 300mls maple syrup
  • 300mls coconut syrup
  • 1 teaspoon vanilla bean paste
  • 8 free range eggs
  • 4 free range egg yolks

  • 100 grams ground toasted almonds (skin on)
  • 500mls of milk of your choice
  • 500mls coconut cream (or pouring cream)
  • 5 pears de seeded and thinly sliced
  • 200 gms of passion fruit pulp with seeds (10 fruit pods)
  • 300mls maple syrup
  • 300mls coconut syrup
  • 1 teaspoon vanilla bean paste
  • 8 free range eggs
  • 4 free range egg yolks
