Dreamy Crab Salad

Crab meat is a sweet and tasty alternative to meat, this meal can be replaced with fresh shelled and chopped prawns.

Ingredients

High fibre - 6 grams of fibre per serve

1 Cos lettuce washed, and leaves separated
1 tablespoon lime juice
1 tablespoon finely grated lime zest
50 grams whole egg mayonnaise
2 170g cans shredded crab meat, drained
1 125g can corn kernels, drained
1 Lebanese cucumber, chopped
1 brown onion, peeled and diced
2 ripe avocados cut into cubes
1/2 bunch coriander or parsley sprigs roughly chopped
pinch of paprika

Low fibre - 3 grams of fibre per serve

1 Cos lettuce washed, and leaves separated
1 tablespoon lime juice
1 tablespoon finely grated lime zest
50 grams whole egg mayonnaise
2 170g cans shredded crab meat, drained
2 Lebanese cucumber, peeled and chopped
1 teaspoon onion powder
2 ripe avocados cut into cubes
1/2 bunch coriander or parsley sprigs roughly chopped

Dreamy Crab Salad Directions

Arrange lettuce leaves on plates as a base

Mix lime juice, lime zest, paprika and mayonnaise, in a large bowl until blended.

Add the crab meat and stir through until combined. Mix in onion, corn and cucumber

Add avocado to the crab meat and and mix gently to combine.

Add herb(s) of your choice and mix through

Spoon over lettuce leaves to serve.
