Protein Muffins (278 )

High protein is not just great for muscles, the amino acid building blocks of protein assist in recovery from surgery and illness.
Ingredients
High fibre - 4 grams of fibre per serve
1/2 cup almond flour |
1 tablespoon almond meal |
1 teaspoon baking powder |
2 scoops (approx. 65 grams) vanilla pea or brown rice protein powder |
1/2 cup Mayver’s ® skin on peanut butter (You could also use any other nut butter) |
1 cup unsweetened applesauce |
chocolate chips as required |
Olive oil spray for the muffin tin |
Low fibre - 2 grams of fibre per serve
1/2 cup almond flour |
1 teaspoon baking powder |
2 scoops (approx. 65 grams) vanilla pea or brown rice protein powder |
1/2 cup Mayver’s ® skin on peanut butter (You could also use any other nut butter) |
1 cup unsweetened applesauce |
chocolate chips as required |

Protein Muffins Directions
Heat the oven to 180C
Spray a muffin tray with olive oil
Add the dry ingredients into a large bowl and mix. Add the applesauce, peanut butter and fold it into the dry mix until completely blended.
Add the chocolate chips and mix through.
Bake at 180 degrees for approximately 15 minutes or until the muffin bounces back in the middle. Let cool for a few minutes before serving.
Recipe notes
NOTE: make sure the protein powder has less than 3 grams of fibre per scoop.
