Caramel Sauced Oranges

A delicious dish to increase vitamin C, folate, potassium, and thiamine intake.

4 large oranges
1 juiced orange
1/2 cup brown demerara sugar
1/4 cup water
1 teaspoon all spice
50 grams crushed walnuts

Caramel Sauced Oranges Directions

Heat the oven to 200C.

Peel the oranges with the white part cut off and segment the oranges to peel most of the membrane off so you are left with the flesh.

Cut each segment in half.

Put the walnuts on baking paper and heat until warm (approx 5-10 minutes).

At the same time in a heavy bottom pan place the orange juice, all spice, sugar and water.

Bring to a boil on medium, the mixture will turn slightly caramel in colour and thicken, about 5-10 minutes

Take the nuts out of the oven

Pile the orange segments on each of the four plates sprinkle with hot walnuts and drizzle the caramel evenly over each dish.

Serve with a dollop of vanilla yoghurt, coconut yoghurt, or ice cream
