Pulled Chicken Salad (206 )
Super quick and super impressive! This pulled chicken dish is great for a quick dinner or lunch. Cooked cooled pasta contains resistant starch which is beneficial for a healthy bowel and digestive system, and helps to balance blood glucose levels.

200 grams cooked pulled BBQ chicken |
6 fresh (or dried) apricots thinly sliced |
100 grams dry weight of orzo pasta |
150 grams baby spinach |
70 grams fontina cheese (or cheddar) cut into small cubes |
30 grams parmesan cheese |
1/4 cup chopped parsley |
4 tablespoon crushed walnuts |
5 tablespoon olive oil |
3 tablespoon red wine vinegar |
salt and pepper to taste |
Pulled Chicken Salad Directions
Shred cooked cooled chicken with a fork
Place cooked cooled orzo pasta in a microwave dish mix through fontina and parmesan cheese and microwave for 1-2 minutes until cheese has just melted, mix through the pasta
Let the bowl cool add spinach, parsley, chicken, walnuts and apricots and blend evenly through the salad
Mix olive oil and red wine vinegar with salt and pepper blend well and pour on the salad. Mix through
Serve on its own or with crusty seeded bread and olive oil dip
