Roasted Apple and Veggies (185 )

A sweet and tasty twist to roasted vegetables.

2 parsnips (peeled and sliced thickly length ways) |
1 large carrot (peeled and sliced thickly length ways) |
2 large red skinned potatoes (peeled and cut into chunks) |
2 large red apples (cored and sliced into four) |
4 sprigs of Thyme* (leaves separated from the twig) |
4 tbsp extra virgin olive oil |
cracked salt and pepper to taste |
Roasted Apple and Veggies Directions
Heat oven to 180C for 20 minutes
Place all ingredients in a large bowl and coat with olive oil and ensure the vegetables are coated with the oil and thyme leaves (or powder)
