Dijon Orange Summer Salad



150 grams baby spinach leaves
2 large oranges (peeled, deseeded and sliced thinly)
60 grams lightly crushed *macadamia nuts
100 grams feta cheese
1 tablespoon fresh thyme leaves (blend thyme into a paste with water if ostomate)
4 tablespoons extra-virgin olive oil
1 tablespoon dijon mustard
4 tablespoons lemon juice
2 crusty sourdough warm white bread rolls

Dijon Orange Summer Salad Directions

Place all salad ingredients into a bowl

Shake dressing ingredients in a tight clean glass jar until they are well blended

Pour dressing over the salad ingredients and gently mix through

Serve with crusty sourdough warm white bread roll
