150 grams baby spinach leaves |
2 large oranges (peeled, deseeded and sliced thinly) |
60 grams lightly crushed *macadamia nuts |
100 grams feta cheese |
Dressing: |
1 tablespoon fresh thyme leaves (blend thyme into a paste with water if ostomate) |
4 tablespoons extra-virgin olive oil |
1 tablespoon dijon mustard |
4 tablespoons lemon juice |
2 crusty sourdough warm white bread rolls |
Dijon Orange Summer Salad Directions
Place all salad ingredients into a bowl
Shake dressing ingredients in a tight clean glass jar until they are well blended
Pour dressing over the salad ingredients and gently mix through
Serve with crusty sourdough warm white bread roll
