1 teaspoon chives (finely chopped) |
300 grams zucchini |
100 grams baby spinach |
1 red pepper (skinned) |
extra-virgin olive oil spray |
Dressing: |
3 tablespoons walnut oil |
1/4 cup pomegranate juice |
2 teaspoons dijon mustard |
salt to taste |
Twisted Pomegranate Salad Directions
Dressing:
Add all ingredients together and beat until they are totally combined
Salad:
Cut zucchini into 3cms chunks
Finely chop chives
Spray zucchini and chives with extra virgin olive oil
Heat a fry pan to medium heat
Fry zucchini and chives until golden brown
Add baby spinach leaves stir through and take off heat
Make dressing
Place cooled pan ingredients in a serving dish and mix dressing through, serve immediately
