Citrus Green Pea Risotto

Ingredients

Citrus Green Pea Risotto

1 medium chopped and peeled brown onion
1 cup arborio rice (dry do not rinse)
1 1/2 litres vegetable broth
30 ml lemon juice
2 teaspoon freshly grated lemon zest
1 teaspoon dried Italian herbs
1 cup fresh of defrosted frozen peas water drained off
Salt and black cracked pepper to taste

Citrus Green Pea Risotto Directions

Preheat to medium heat a large heavy bottomed pan with some olive oil.

Add the chopped onion and sauté it over medium heat until it becomes translucent.

Add the dry arborio rice to the pot and sauté it with the onion until the rice grains turn pearlescent.

Gradually add one cup of the warm broth to the rice, stirring gently but continuously until the liquid is absorbed by the rice.

Repeat this process with three or more cups of broth. If the risotto hasn't achieved a creamy texture at this point, add an additional half cup of stock.

Stir it in and add the remaining half cup if necessary to reach the desired creaminess.

Remove the pot from the heat and stir in the fresh lemon juice, lemon zest, Italian herbs, salt, and pepper.

Finally, warm the peas and mix them through the risotto. Taste and add more salt, pepper, lemon, or herbs, to your preference.

Serve immediately with a crisp green salad.
