Avocado Grapefruit Medley

Avocados are packed with essential nutrients, including potassium for healthy blood pressure, dietary fiber for digestion and weight management, and a variety of vitamins like K, E, C, and B, with high folate levels important for healthy cell division. 

Ingredients

Avocado Grapefruit Medley

3 large grapefruit
2 large ripe avocados
1 cup flatleaf parsley or coriander, roughly chopped and gently packed
Juice of one whole lemon
1/2 lemon zest
2 tablespoon lemon zest
Pinch coarse salt, to taste

Avocado Grapefruit Medley Directions

Peel the grapefruit to take off the outer segment skin and slice it into wedges or bite-sized chunks. Add to a large mixing bowl and set them aside.

Remove and discard the peel and pit of the avocado. Cut the avocado into slices or bite-sized cubes and add them to the mixing bowl with the grapefruit.

Add the coriander to the bowl with the grapefruit and avocado. Gently toss to combine these three ingredients.

In a separate small mixing bowl, whisk together the lime juice and olive oil. Pour this dressing over the grapefruit and avocado mixture, and fold gently to coat everything.

Add salt to taste and serve the salad immediately.
