Valentine's Day Mocktails

Ruby Red Punch

Makes approximately 3 – 4 drinks, approximately 1-2 grams of fibre per serve

 *Vegetarian, vegan

Ingredients

  • 250 grams of frozen strawberries
  • 2 fresh strawberries halved for decoration
  • 4 finely chopped mint leaves for decoration
  • 120mls organic coconut water
  • 2 cups of ice
  • 1 small seedless watermelon 
  • Fresh juice of three lemons
  • Stevia drops if you like a sweeter taste

Method

  1. Slice watermelon in half and scoop out the flesh with an ice-cream scoop or spoon place in a blender
  2. Squeeze juice of three lemons add to the blender with frozen *strawberries and coconut water and blend
  3. Can be refrigerated for a couple of hours
  4. To serve add juice to blender with two cups of ice and blend
  5. Serve immediately in a chilled martini glass with a halved heart shaped strawberry on the side of the glass with a pinch of shredded mint on top 
  6. * Blend strawberries and strain out large pips for ostomates

Rosemary Lime Kiss

Makes 2 drinks, approximately 2 grams of fibre per serve

*Vegetarian, vegan

Ingredients

  • 200 mls of freshly squeezed ruby grapefruit juice approx. 1 large grapefruit (or 1 large grapefruit and ½ blood or ordinary orange juiced)
  • 300mls of sparkling mineral water
  • Thin wedges of blood orange for decoration
  • Spiral peel two limes
  • Juice two limes
  • Two stems of rosemary leaves
  • Stevia to sweeten

Method

  1. Chill two long glasses 10 minutes
  2. Pour freshly squeezed ruby grapefruit (or alternative) into a water jug add two lime juice sweeten with stevia to taste
  3. Remove chilled glasses from fridge
  4. Add ice to glasses
  5. Pour mixture into the bottom of the chilled glasses over the ice
  6. Add spiralled lime peel to each glass and a stalk of rosemary
  7. Gently top with sparkling water to achieve a two tone effect
  8. Serve with a slice of orange on the side of the glass
