High fibre

Ingredients

  • 2 Tablespoons olive oil
  • 2 onions finely chopped
  • 2 carrot finely chopped
  • 2 celery sticks finely chopped
  • 1 kg ground beef mince
  • 1/4 cup tomato paste
  • ¼ cup wholemeal flour
  • 2 cups beef stock
  • 1 teaspoon salt
  • ½ teaspoon cracked black pepper
  • 2 dried bay leaves
  • 1 Tablespoon dried thyme
  • 1 Tablespoon dried oregano
  • Pinch salt
  • Butter for fry pan

  • Topping:
  • 1.2kg potatoes, peeled and cut into quarters
  • ½ cup milk
  • 2 Tablespoons butter

Method

Heat oil in a large pan.

Add garlic and onion and cook for 2-3 minutes until tender. Add carrot and celery and cook for a further 2-3 minutes. Add mince.

Continue to cook until the mince is brown.

Add tomato paste, bay leaves, thyme and oregano, salt and pepper.

Add flour to the stock and mix with the mince.

Stir until thickened and simmer for 20 minutes.

Transfer the mince to a casserole or pie dish and allow to cool.

Topping:

Boil the potatoes until soft. Drain then return to the pot with butter, milk and salt.

Mash until smooth.

Add mash potato to the cooled mince and smooth the surface.

Top with grated cheese if desired.

Cook in oven at 180C for 30 minutes or until potato is golden.

Let stand for 10 minutes before eating.
