Ingredients

  • 4 ripe bananas
  • 3 eggs, whisked
  • 2 cups whole meal self-raising flour
  • ½ crunchy peanut butter
  • 2 teaspoon vanilla extract
  • ½ cup sour cream
  • ½ cup extra virgin olive oil
  • Pinch of salt

Method

Preheat the oven to 160C.

Grease and line standard loaf tin with baking paper.

Mash the bananas and peanut butter with a fork in a large bowl. Add remaining wet ingredients and combine well.

Add flour and salt. Combine well.

Add mixture to the prepared loaf tin and bake in oven for 60-70 minutes or when a skewer comes out clean.

Allow to cool for 10 minutes in the pan and transfer to a cooling rack.
