High fibre

Ingredients

  • 2x apples, peeled and cut into approximately 2cm pieces
  • ½ x tsp ground cinnamon
  • 2x tbsp water
  • 1x tbsp fresh lemon juice
  • 6x heaped tbsp plain Greek yoghurt
  • 4x tbsp pepitas
  • 1x tbsp ground psyllium husks

Method

Place the apple, cinnamon, water and lemon juice in a saucepan over a low to medium heat.

Once simmering, reduce heat to low and cover the pan.

Cook, stirring occasionally until the apple is tender.

If you prefer a softer texture, continue cooking until the apple becomes mushy and soft.

Serve the apple on top of the Greek yoghurt and top with a sprinkling of pepitas and ground psyllium husk.

If you would like to boost the protein levels to make this dish more of a meal, mix 30g of good quality, unflavoured protein powder in with the Greek yoghurt before serving.
