High fibre

Ingredients

  • 100g rolled oats, uncooked
  • 1x tbsp psyllium husks
  • 120g cottage cheese
  • 2 large eggs
  • ¼ tsp cinnamon
  • Pinch of salt
  • Dollop Greek yoghurt to serve
  • Drizzle of honey to serve

Method

Place oats, psyllium, cottage cheese, eggs, salt and cinnamon in a blender and process until well combined to form a batter.

Heat a frying pan over a medium heat.

Ladle 2x tbsp of batter into the pan and cook for 2-3 minutes until set around the edges and a golden brown colour on the bottom.

Flip the pancake using a spatula and cook for another 2 minutes.

Transfer to a plate and repeat with the rest of the batter mix.

Serve warm with berries and a drizzle of honey.
