Ingredients

  • 6 slice wholemeal bread
  • 3x tbsp butter
  • 2 large eggs
  • 125ml almond milk
  • ½ tsp cinnamon
  • 1x tsp vanilla extract
  • Maple syrup to serve
  • 1x punnet of blueberries to serve

Method

Whisk eggs, milk, cinnamon and vanilla extract together in a large bowl to combine.

Heat a large frying pan over a medium heat and melt 1x tbsp of butter.

Submerge 1 piece of bread in the egg mixture, making sure it’s well coated on both sides.

Place in the pan and cook for 2-3 minutes on each side until golden brown.

Transfer to plate.

Add more butter to oil the pan as needed and repeat process with the rest of the bread.

Serve topped with berries and maple syrup.
