Edible Christmas wreath using high and low fibre ingredients

High fibre

Ingredients

  • 7 kiwi fruit
  • 200g pineapple
  • 150g fresh blueberries
  • 2 tbsp pomegranate seeds
  • 1 cinnamon stick

Method

Slice the pineapple into rounds.

Using a small star-shaped cookie cutter, cut stars out of the pineapple, avoiding the hard core at the centre.

Peel the kiwi fruit, then cut in half and slice into semi-circles.

Place the cinnamon stick at the bottom of the platter or board to create your tree trunk.

Please note that the cinnamon stick is for decoration – not to eat!

Arrange the kiwi slices to create a tree shape, overlapping each row to create layers until you reach the top of your tree.

Decorate the tree with blueberries, pineapple stars and pomegranate seeds.

Finish the tree with one pineapple star at the top of the tree.

  • ¼ large watermelon, seedless
  • 200g rockmelon
  • 100g green grapes
  • 100g fresh blueberries
  • 1 cinnamon stick

Method

Slice the honeydew melon into rounds.

Use a small star-shaped cooking cutter to cut star shapes.

Cut the watermelon into small wedges.

Place the cinnamon stick at the bottom of the platter or board to create your tree trunk.

Decorate the tree with grapes, blueberries and melon stars.
