Ingredients

  • 3x tbsp extra virgin olive oil
  • 1 large white onion, chopped
  • 4 garlic cloves, minced
  • 1x tbsp white wine vinegar
  • 350ml vegetable broth
  • 650g white potato, roughly chopped
  • 200g tinned cannellini beans, drained and rinsed
  • ½x tsp Dijon mustard
  • 1x tbsp fresh lemon juice
  • 1x tsp smoked paprika
  • Salt and pepper to taste

  • 50g chives
  • 6x tbsp Greek yoghurt
  • 100g shredded cheese

Method

Heat 2 tablespoons of olive oil in a large pot over a medium heat.

Add the onion and garlic, along with large pinch of salt and pepper. Cook until softened.

Add the white wine vinegar and cook for approximately 30 seconds, before adding the potatoes, broth and beans.

Bring the mixture to a boil, before reducing the heat and leaving to simmer for about 30 minutes.

Transfer the soup mix to a blender. Add the mustard, lemon juice and paprika and blend until smooth.

Season to taste and serve with a dollop of Greek yoghurt, chopped chives and shredded cheese on top.
