Add the onion and garlic, along with large pinch of salt and pepper. Cook until softened. Add the white wine vinegar and cook for approximately 30 seconds, before adding the potatoes, broth and beans. Bring the mixture to a boil, before reducing the heat and leaving to simmer for about 30 minutes. Transfer the soup mix to a blender. Add the mustard, lemon juice and paprika and blend until smooth. Season to taste and serve with a dollop of Greek yoghurt, chopped chives and shredded cheese on top.
