High fibre

Ingredients

  • 1 slice Soyco® Malaysian peanut satay tofu (cut into long slivers then slice into small cubes)
  • Extra-virgin olive oil spray
  • 2 sweet potatoes (scrubbed clean, peel on)
  • 1 teaspoon sumac or paprika
  • 2 medium, soft avocados
  • 1/4 cup fresh lime juice
  • 1/4 cup packed chopped coriander
  • Salt and pepper to taste

Method

Heat oven to 210C.

Line two baking trays with baking paper and spray with olive oil.

Scrub sweet potatoes and cut them into 2 cm round slices.

Arrange them in a single layer on the trays, spray the top of them and bake for 20 minutes or until golden and crunchy.

Flip them over and spray with olive oil and bake for another 10 minutes until golden.

In a small bowl halve and scrape out the flesh of the avocados and smash the avocado with a fork adding lime juice salt and pepper to taste and some sumac or paprika. Add in some roughly chopped coriander (save some for decoration).

When the sweet potatoes are cooked spoon on a dollop of the avocado smash and sprinkle with tofu and coriander for decoration.

  • 100 grams Tofutti® ‘cream’ cheese
  • 1/4 cup fresh lime juice
  • 1/4 cup packed chopped coriander
  • Salt and pepper to taste
