Ingredients

  • 5x eggs
  • 115g self-raising flour
  • 250g zucchini, grated
  • 150g kale, chopped
  • 4x spring onions, thinly sliced
  • 1x garlic clove, finely chopped
  • 2x tbsp parsley, finely chopped
  • 100g grated cheese
  • 150g high protein cottage cheese

Method

Preheat the oven to 180C.

Line a brownie tin with baking paper.

Put grated zucchini in a bowl and sprinkle with salt.

Leave for 10 minutes, before draining and squeezing the zucchini to remove excess liquid.

Whisk together the eggs and flour in a large mixing bowl until well combined.

Add the zucchini, spring onions, garlic, and both cheeses.

Add salt and pepper and stir to combine.

Transfer the mixture to the tin and bake in the oven for 40 minutes until cooked through.

Remove the tin from the oven and leave to cool for 10-15 minutes.

Cut into slices and serve.
