High fibre

Ingredients

  • 12 round rice paper wrappers
  • 400g hot roast chicken, shredded
  • 100g soba noodles, cooked and cooled
  • 300g red cabbage, thinly sliced
  • 1 large carrot, cut into matchsticks
  • 2 large cucumbers, cut into matchsticks
  • 100g bean sprouts
  • 3 spring onions, thinly sliced
  • Handful of fresh cilantro leaves
  • Handful of fresh mint leaves
  • 1 avocado, thinly sliced
  • 60g peanut butter
  • 1 tablespoon tamari sauce
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar

Method

To make the dipping sauce, combine the peanut butter, tamari sauce, lime juice and sugar in a bowl and whisk until mixed. Set aside.

Dip 1 rice paper wrapper in cold water for 10-20 seconds until it starts to soften. Place it on a clean tea towel to dry briefly, then place it on a clean work surface or chopping board.

Top with a selection of vegetables, noodles and chicken. Finish with slices of avocado and a few cilantro and mint leaves.

When finished, fold in end and roll up firmly to close. Repeat with all wrappers. Serve with the dipping sauce.

Ingredients

  • 300g iceberg lettuce, thinly sliced
  • 1 large carrot, cut into matchsticks
  • 2 large cucumbers, peeled, deseeded and cut into matchsticks
  • 100g bean sprouts
  • 3 spring onions, thinly sliced
  • Handful of fresh cilantro leaves
  • Handful of fresh mint leaves
  • 4 tablespoons lime juice
  • 6 tablespoons fish sauce

Method

To make the dipping sauce, combine the lime juice and fish sauce in a small bowl. Set aside.

Dip 1 rice paper wrapper in cold water for 10-20 seconds until it starts to soften.

Place it on a clean tea towel to dry briefly, then place it on a clean work surface or chopping board.

Top with a selection of vegetables, noodles and chicken.

Finish with a few leaves of cilantro and mint.
