Ingredients

  • 4 portions skin on salmon
  • 4 slices of fresh lemon
  • 60g pesto
  • 200g green beans
  • 200g broccolini
  • 1x 450g family size packet brown rice and quinoa microwaveable rice
  • Extra virgin olive oil
  • Salt and pepper to taste

Method

Heat grill to medium.

Line a baking tray with foil and lightly baste the foil with olive oil.

Put the salmon, skin-side down, on the tray and add 1 teaspoon of pesto to each piece, spreading it evenly across the top.

Lightly grill the salmon pieces for approximately 8 minutes for pink inside or longer depending on your preference.

Heat the rice as per instructions on the packet.

Steam the broccolini and green beans and add them to the rice and toss through.

Add a tablespoon of pesto to add more flavour, plus salt and pepper to taste.

Divide the rice between 4 bowls and place a piece of salmon on top of each bowl.

Squeeze fresh lemon on top of each piece of salmon. Serve with a slice of lemon.

  • Extra virgin olive oil
  • Salt and pepper to taste
