Ingredients

  • 500g packet gnocchi
  • 1 bunch asparagus, woody ends trimmed and cut into 3cm lengths
  • 150g smoked salmon slices, torn into large pieces
  • 150g frozen peas
  • 150g spinach
  • 4x tbsp mascarpone
  • 1 small lemon

Method

Bring a large saucepan of water to the boil.

Add the gnocchi, asparagus and peas to the water and cook for 2-3 minutes until the gnocchi rises and floats on the surface.

Drain well and set aside.

Grate 1 tablespoon of lemon zest, then juice the lemon.

Add mascarpone, juice and spinach to the pan and warm, stirring until the mascarpone is melted and spinach has wilted.

Add gnocchi and the rest of vegetables to the pan and stir until coated in the mixture.

Add lemon zest and season with salt and pepper to taste before serving.
