High fibre

Ingredients

  • 1 Cos lettuce washed, and leaves separated
  • 1 tablespoon lime juice
  • 1 tablespoon finely grated zest of lime
  • 50 grams of whole egg mayonnaise
  • Pinch of paprika 2 x 170g cans drained shredded crab meat
  • 125g can drained corn kernels, drained
  • 1 Lebanese cucumber, chopped
  • 1 peeled and diced brown onion
  • 2 ripe avocados chopped into chunks
  • 1/2 bunch coriander or parsley sprigs roughly chopped

Method

Arrange the Cos lettuce leaves on the plates as a base.

Mix the lime juice, lime zest, paprika and mayonnaise, in a large bowl until blended.

Add the crab meat to the dressing and stir through until combined.

Mix in onion, corn and the cucumber.

Take the skin off each avocado and remove the seed. Roughly chop it into pieces.

Add to the bowl with the crab meat and dressing and mix gently to combine.

Add the herb of your choice and mix through.

Serve on a bed of Cos lettuce.
