Salt the water. Add the rigatoni to the boiling water. Follow the directions on the packet for cooking times. Heat a large fry pan over medium heat add 2-3 tablespoons of olive oil and add onion, garlic and capsicum and cook for 2-3 minutes, add the chicken and herbs and cook for 6- 8 minutes until cooked through. Add the feta and canned tomatoes and combine well over medium heat for 2 minutes. Just before the pasta is ready, reserve some of the cooking water in a heat proof jug. Drain the pasta. Add the cooked pasta to the chicken and combine well. Add the reserved pasta water to thicken the sauce. Add the spinach, capers and parmesan. Season with salt and pepper.
