High fibre

Ingredients

  • 8 lean chicken sausages
  • 1 red apple (cored and cut into thick wedges)
  • 2 medium peeled carrots
  • 50g chopped yellow squash
  • 1 tsp garlic powder
  • 1 tbsp dried Italian herbs
  • 1 tbsp extra virgin olive oil
  • 400ml dry cider
  • 200ml low sodium chicken stock
  • 1 tbsp arrowroot flour
  • 50ml pouring cream

Method

Heat oil in a thick bottomed pan and gently fry the sausages until golden brown

Take the sausages out and put them aside.

Put the pan back on medium heat and add apple, squash and carrots and cook until soft

Add cider, stock, herbs, garlic powder. Sift in flour and stir until thickened a little.

Add the sausages and simmer for 5-10 minutes.

Add cream and simmer for further 5-10 minutes.

Add more flour if you want a thicker sauce.
