Apple, Onion & Goats Cheese Tart vegetarian Apple themed Breakfast / Brunch Dinner Lunch All Apple themed Breakfast / Brunch Dessert Dinner Lunch Snacks / Drinks Soups / Sides / Sauces Summary Apple, onion and goats cheese tart using high fibre ingredients Preparation Time: 20 Cooking Time: 40 Total Time: 60 Quantity: 4 High fibre Ingredients 4 medium sized apples sliced in wedges, skin on approx. 5mm thick. 2 red onions 100 grams goat’s cheese 1 sheet of thawed puff pastry 6 sprigs thyme 1 Tbsp butter 1 Tbsp balsamic vinegar 1 egg lightly whisked Olive oil Sea salt Black pepper Method Pre heat oven to 180C. Prepare a baking tray with baking paper. Add the onions with the butter and olive oil to a fry pan. Allow the onions to soften over medium heat for 10 minutes. Add balsamic and continue to stir. In a mixing bowl toss the apples, thyme, sea salt and drizzle of extra virgin olive oil. Lay the pastry on the baking tray. Leaving a 3 cm border around the edge of the thawed pastry sheet place the cooked onion mixture evenly over the pastry. Arrange 4 slices of apple together with the skin side up. Then lay 4 slices of apple in another direction. Repeat until you have filled the tart. Crumble the goats cheese evenly over the tart. Fold the pastry edges over the tart ingredients. Brush edges with lightly whisked egg. Bake in oven for 25-30 minutes until the pastry is golden and the apples soft. Can be served hot or cold. Drizzle with balsamic vinegar and sea salt.
