Leave for 10 minutes, then use your hands to squeeze excess juice out of the zucchini. Set aside. Sift the flour into a large bowl. Make an indentation in the middle of the flour and add the eggs and soda water. Whisk the mixture to create a smooth batter. Allow to sit for 10-15 minutes. Add the parmesan, green onion, peas and zucchini to the batter. Season with salt and pepper and mix to combine everything together. Heat a large frying pan over a medium heat. Add the olive oil and once hot, ladle a spoonful of the batter into the pan. Allow to cook for 3-4 minutes each side until crispy and cooked through. Remove from the pan and continue the process with the remaining batter. Serve with your choice of toppings. Chopped herbs, sour cream or poached eggs all work well.
