High fibre

Ingredients

  • 2 salmon fillets
  • 45g Panko breadcrumbs
  • 30g almond meal
  • 25g Parmesan, grated
  • 1 garlic clove, peeled and minced
  • 2x tbsp good quality mayonnaise
  • 2x tbsp parsley, finely chopped
  • 1x tbsp extra virgin olive oil
  • Salt and pepper

Method

Preheat oven to 220C.

Combine in a bowl the breadcrumbs, almond meal, parmesan, parsley, garlic and olive oil.

Season mixture with salt and pepper.

Spread the mayonnaise thickly on top of each salmon fillet.

Then press the top side of each piece of fish into the mix in the bowl, allowing the mixture to stick to the mayonnaise and create a crust.

Put the fish on a baking tray and cook in the oven for approximately 12-15 minutes, until the fish is cooked.

Finish for 2-3 minutes under the grill until the crust is crisp and golden, watching carefully to make sure it doesn’t burn.

Serve with lemon wedges and your choice of sides.
