Makes 16 mini muffins with muffin tops, approximately 4-5 grams of fibre per serve
* Vegetarian , VG

Ingredients
  • 50 grams rolled oats with a little extra for decoration
  • 200 grams of wholemeal flour
  • 50 grams of flaxseed meal
  • Enough peeled boiled cooked pumpkin puree to make ¾ cup
  • 245 mls of milk of your choice
  • 1 teaspoon of vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¼ cup of stevia
  • 3 tablespoons of melted coconut oil
  • 1 egg OR vegan 1 teaspoon of No Egg replacer to 2 tablespoons water
  • 2 Large peeled, cored and finely chopped apples
  • 1 teaspoon of cinnamon powder (if desired)

  • ¼ cup finely chopped basil leaves
  • 100 grams of walnuts
  • 400 grams of cooked quinoa
  • 500 grams of red apples, cored and halved
  • Zest and juice of one lemon
  • 3 tablespoons of apple cider vinegar
  • 1/4 cup of olive oil plus additional tablespoon olive oil for cooking sausages
  • Salt and pepper to taste

  • 1 litre of cloudy apple juice
  • 4 cinnamon sticks
  • 1 teaspoon of powdered (or fresh grated) ginger
  • ¼ cup of lemon juice
  • 4 teaspoons of honey
  • 1 peeled apple, chop across apple so there is a round slice for decoration on the glass
