Makes 4 serves, 2-3 grams of fibre per serve

Ingredients
  • 2 oranges – seasonal blood or Seville
  • 2 cups cooked white rice (from 1 cup uncooked)
  • 1 red grapefruit
  • 2-3 tablespoons of honey and 1 cardamom pod lightly crushed
  • 1 cup of water
  • ¼ cup desiccated coconut flakes
  • Plain yoghurt of your choice

Ingredients
  • ½ (80 grams) cup of shredded dried coconut or 1 cup of fresh finely chopped coconut meat (delicious if you can find some)
  • 2 cups of rolled oats
  • 3 tablespoons of plain cocoa or carob powder
  • 2/3 cup of organic coconut sugar or stevia to taste
  • A pinch of rock salt
  • 1 teaspoon of vanilla paste or vanilla extract
