Makes 4 serves, approximately 1-2 grams of fibre per serve
 
Ingredients
  • 50 grams of olive oil
  • 250 grams of radish, 100 grams of carrot, 4 medium red skinned potatoes peeled
  • 2 teaspoons of brown sugar
  • Salt and pepper to season
Method
Steam/ microwave potatoes and carrots until par cooked
Set aside until turkey is 15-20 minutes away from being cooked
Warm olive oil in a pan and add brown sugar gently stir until sugar has melted, take off heat and coat the potatoes, carrot and radish in the mixture and place into a baking tray. Season with salt and pepper crisp in the oven with the turkey for 15-20 minutes until the vegetables are browned
