Makes 8-10 frittatas
 
Ingredients
  • ¼ red onion, finely diced
  • 1 clove of garlic, finely diced
  • ½ cup of fresh or tinned corn kernels
  • 90 grams of Mushrooms
  • 2 eggs
  • 2 tablespoons of semi sun dried tomatoes finely chopped
  • 1 tablespoon of parsley finely chopped
  • 1/4 cup of feta cheese

  • Two tablespoons of vanilla yoghurt
  • Apple juice to moisten muesli

  • ½ cup of cooked rice flakes
  • ½ cup of peaches (canned or tubbed in natural juice)
  • 2 tablespoons of vanilla yoghurt
  • ¼ teaspoon of stevia (if required)

Place all ingredients into a blender and blend until smooth.

  • 1 pound steel cut oats
  • 1 cup walnuts, or other nuts
  • 2 tbsp yogurt, kefir, whey or buttermilk (for soaking)
  • dash unrefined sea salt
  • 6 pastured eggs
  • 2 cups whole, fresh milk
  • up to ¼ cup maple syrup (optional)
  • ½ cup raisins or dried cranberries
  • ½ cup dried unsulfured apricots (diced)
  • 2 tbsp cinnamon
  • ¼ cup coconut oil (plus extra for greasing baking dish)

  • 1 cup of whole wheat flour or buckwheat flour
  • ½ cup of rolled oats
  • ¼ cup of cornmeal
  • 3 tablespoons of chia seeds or LSA (linseed, sesame and almond) meal
  • 1 tablespoon of honey
  • ½ teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1 egg beaten
  • 2 cups of full fat milk or soy milk
  • Olive oil to grease the pan
