Warming Winter pasty (Low Fibre)

Makes 4 large pasties, 2-3 grams of fibre per pasty.
 
 
Ingredients
Four sheets of pastry (puff or shortcrust) where possible (ensure this is vegetarian friendly if necessary – Borg's)
 
Filling
  • 450 grams of lean very thinly sliced beef (or drained brown lentils if vegetarian/vegan)
  • 350 grams large white potatoes peeled
  • 100 grams carrot
  • 250 grams turnip
  • Salt and pepper
  • 1 tablespoon of extra virgin olive oil
  • Heat oven to 200 C
 
Method
  1. Chop all of the dry ingredients finely
  2. Lay out the pastry square and cut a circular shape (use a plate and cut around it)
  3. Layer the ingredients one by one in the middle of the pastry sheet
  4. Add a teaspoon of extra virgin olive oil on top of the pile
  5. Fold the pastry over the filling and press together
  6. Fold the pastry edges firmly over to seal the ends (and prevent ingredient liquid seeping out)
  7. Cook for 40 minutes , check if inside is cooked with a wooden satay stick, stick should pass easily through the pasty
  8. Brush with remainder of olive oil and brown for 5-10 minutes
  9. Enjoy with tomato sauce and serve with steamed fresh greens
