Warmed citrus quinoa porridge (Low Fibre)

Makes 4 serves, 2-3 grams of fibre per serve

  • 2 oranges – seasonal blood or Seville
  • 2 cups cooked white rice (from 1 cup uncooked)
  • 1 red grapefruit
  • 2-3 tablespoons of honey and 1 cardamom pod lightly crushed
  • 1 cup of water
  • ¼ cup desiccated coconut flakes
  • Plain yoghurt of your choice
In 1/2 cup of water add the honey and cardamom pods simmer gently for 10 minutes put aside to cool
Peel the citrus fruit and pull them into segments – add to the cooled honey water
Soak the citrus in honey cardamom, juice mix for 1- 12 hours (overnight is best)
Just before consuming
Place cooked rice in a small pot with 1.5 litres of water and a pinch of salt, bring to a boil and then reduce to a low heat and cover
Stir every few minutes for about 15 minutes until rice is soft and water is absorbed
When quinoa is cooked
Remove cardamom pod from fruit and honey mix
Add the citrus and honey mix to the rice pot and gently mix through rice– taste to see if it is sweet enough (add more honey if desired)
Serve warm
Top with plain yoghurt of choice and desiccated coconut flakes
