Star anise mushrooms – (High Fibre)

Makes 4-6 serves, approximately 4 grams of fibre per serve

* Vegetarian, vegan
 
Ingredients
  • Mixed mushrooms 1 cup each of enoki, shiitake, Portobello and button
  • 1 tablespoon of sesame oil
  • Marinade
  • 1 tablespoon brown sugar
  • 2 garlic cloves diced finely
  • 2 tablespoons of catsup manis
  • 2 tablespoons of orange juice
  • 2 star anise
  • 4 tablespoons of sesame seeds
  • Chopped coriander for decoration
Method
  1. Preheat oven to 180C
  2. Mix sugar, diced garlic, catsup manis, orange juice and star anise in a large bowl
  3. Let stand at room temperature for 30 minutes and stir occasionally
  4. Roughly slice the mushrooms lengthways
  5. Gently warm sesame oil in a stove to oven dish take off the heat and thoroughly coat the mushrooms in the oil
  6. Add the marinade and stir through the mushrooms and place in the oven for 15 minutes
  7. After 15 minutes sprinkle sesame seeds over the mushrooms and place back in the oven for another 5 minutes or until the sesame seeds are toasted
