Winter Apple Poke Bowl

A hearty winter version of the cold Poke bowl.

Ingredients

1/2 butternut pumpkin (peeled and chopped)
1 red apple (finely sliced)
1 sachet precooked quinoa (microwavable)
1/2 red onion (peeled and diced)
1/2 cup pistachio nuts
1/4 cup cranberries
1/2 cup parsley and coriander finely chopped
200 grams haloumi diced
Sprigs of parsley to decorate
1 tbsp honey
1 tsp grated ginger
2 tbsp extra virgin olive oil
2 tbsp lemon juice

Winter Apple Poke Bowl Directions

Heat an oven to 200C and place butternut pumpkin on baking paper and bake until golden approximately 30-40 minutes

Heat a non-stick pan to medium and add  haloumi and cook until golden

When the pumpkin and haloumi are ready

Mix heated heated quinoa and all the other ingredients together in a bowl, mix through so all the ingredients are evenly distributed

Place the quinoa mix in the bowl and top with pumpkin and haloumi

Blend the dressing ingredients together and pour dressing over the top of the salad and garnish with parsley sprig
