Baked Apple Pie

Ingredients

High fibre - 4 grams of fibre per serve

4 tablespoons LSA (linseed sesame and almond) meal
2 tablespoons coconut flour
1 square, ready-made puff pastry (cut into centimetre thick strips)
1 fresh lemon rind grated
6 granny smith apples
1/4 cup honey
1/4 teaspoon cinnamon (if desired)

Low fibre - 2 grams of fibre per serve

2 tablespoons minute oats
1 tablespoon coconut flour
1 square, ready-made puff pastry (cut into centimetre thick strips)
1 fresh lemon rind grated
6 peeled granny smith apples
1/4 cup honey
1/4 teaspoon cinnamon (if desired)

Baked Apple Pie Directions

Preheat oven to 190C.

Cut the tops off four apples and scoop or cut out the insides very carefully so as not to puncture the outside skin.

Peel the remaining apples and chop into 1cm chunks.

Mix the chunked apple with honey, LSA (minute oats), cinnamon and lemon rind.

Place apples inside dish and fill to the top.

Place strips of pastry over the top in a lattice work, press down gently.

Put all apples in an ovenproof dish.

Pour water in the bottom of the tray approximately 5 cms deep.

Cover with foil, then bake for 20 minutes.

Take the foil off and bake until pastry is golden brown.

Serve with Green tea ice cream.
