Poké salmon (High Fibre)

Two serves, 6-8 grams of fibre per serve
 
Ingredients
  • 1 sheet of nori seaweed sliced into strips
  • 1 peeled and sliced avocado
  • 4 spring onions finely sliced
  • 20 grams of sesame seeds
  • 150 grams of red rice
  • 60 mls of low salt soy sauce (tamari)
  • 60mls of mirin or sherry
  • 2 tablespoons of sesame oil
  • 200 grams of fresh raw sushi grade salmon or tuna
  • Salad
  • 5-6 fresh washed oak lettuce roughly chopped
  • Juice and pulp of one fresh orange
Method
  1. Combine the liquids, soy sauce, sesame oil, Mirin together with sesame seeds and sliced onions and sesame seeds
  2. Dice salmon and pour the mixture over, cover and leave in the fridge for an hour – this is called Poké
  3. Boil red rice for 20-30 minutes until tender, drain and rinse rice with hot water
  4. Divide rice into two bowls
  5. Add poké, pour the remaining sauce over each bowl of rice and top with shreds of seaweed
  6. Serve with a leafy green salad with fresh orange juice dressing
