Pizza bites (High Fibre)

Makes 16-18 bites, approximately 4 grams of fibre per serve (3 bites)

Ingredients

  • 2 pizza dough balls 500g
  • 1 squeeze bottle of 400 grams thick tomato paste pizza style
  • Tablespoon of fresh finely chopped basil leaves
  • 1 peeled and minced garlic clove
  • 1 cup grated mozzarella
  • 2 tablespoons of parmesan
  • 4 tablespoons of sesame seeds
  • Extra virgin olive oil spray
  • Salsa dip for dipping

Method

  1. Preheat oven to 200C
  2. Press pizza dough balls together and blend them into one big ball
  3. Lightly flour a bench top and roll the dough to about half a centimetre thickness try to roll in a rough oblong shape
  4. Squeeze the thick tomato paste over the dough covering the entire surface, finely sprinkle with garlic, sesame seeds and chopped basil leaves
  5. Top evenly with Mozzarella cheese
  6. From the longest length side fold the dough over and roll tightly inward (ingredients on the inside of the roll)
  7. When finished place the roll with the final end face down on the bench top, place on a plate
  8. Cover with cling wrap and place in the fridge of 20-30 minutes
  9. Take roll out place on the benchtop and cut the roll into 2-3 cms wide slices
  10. Place on a lightly sprayed baking paper sheet
  11. Bake for 15 minutes and flip over until both sides are golden brown
  12. Cool for 3-4 minutes and serve with a salsa dip
