Serves 4
 
Ingredients
  • 1 tablespoon of olive oil
  • 1 small onion finely chopped
  • Stalk of celery chopped
  • 2 tablespoons of parsley chopped
  • 420 grams of cooked or tinned salmon drained
  • 1 egg beaten
  • 1½ teaspoons of seeded grain mustard
  • 1¾ cups of fresh whole grain breadcrumbs
  • Salt and pepper to taste
  • Cut lemon to serve

Makes 8-10 frittatas
 
Ingredients
  • 1 teaspoon of red onion, finely diced*
  • 1 clove of garlic, finely diced
  • ½ cup of finely chopped zucchini
  • 90 grams of skinless salmon (deboned)
  • 2 eggs
  • 1 tablespoons of semi sun dried tomatoes finely chopped
  • Tablespoon of parsley finely chopped
  • ¼ cup of feta cheese
  • ½ cup of milk of choice

  • 250 grams of button or field mushrooms chopped finely
  • 1 cup of grated carrot
  • 200 grams of par cooked Brussel sprouts
  • 1 brown onion
  • ½ cup of wholemeal bread crumbs
  • 4 tablespoons of extra virgin olive oil
  • 1.8 kgs free range chicken cut into eight pieces
  • ½ cup of low salt stock – chicken

  • 1.8 kgs free range chicken cut into eight pieces
  • ½ cup of low salt stock – chicken
