Serves 4, 3-4 grams of fibre per serve.
 
Ingredients - Gremolata
  • ½ cup of finely chopped continental parsley
  • ½ teaspoon of garlic powder
  • 2 teaspoons finely grated lime rind
 
Method - Gremolata
  1. Combine all ingredients and set aside
  2.  Eggplant – (these can be made earlier and served warm or cold)

Ingredients
TIP - great way to start the day and get a boost of folate and vegetable iron. Refrigerate all vegetables overnight so they are cold when blended for a refreshing drink
Sweet tooth? Add a tablespoon of either pure maple/agave/coconut syrup to taste
 
  • ½ cup packed Asian vegetables (any leafy green)
  • ¼ cup packed Parsley leaves
  • 2 Lebanese cucumbers
  • ¼ cup packed Baby spinach leaves
  • 5-6 Mint leaves
  • 1 tablespoon linseed, almond and sesame (LSA) powder

TIP – smell the fruit, if you can smell the essence of the fruit it is ripe and juicy, if you cannot smell the lovely fruit smell it is not ready
 
  • ½ cup of yoghurt of your choice, plain and thick
  • ½ peeled pineapple cut into pieces
  • 1 cups of raspberries or Blueberries (fresh or frozen)
