Serves 4, less than 3 grams of fibre per serve.
 
Tip – both apricots and avocados need to be firm to the touch with just a little give under a very gentle squeeze. Choose the thinner asparagus stalks with closed tips; they are tender and easier to chew
 
 
Ingredients
  • 600 grams of chicken or firm tofu cut into thin strips, thoroughly mixed through with one tablespoon of olive oil and one teaspoon of garlic powder marinated over the day in the fridge
  • 3/4 whole avocado cut into slivers
  • 100 grams of apricots stones removed and cut into slivers
  • 1 bunch of fresh asparagus (blanched for 3 minutes in boiled water, removed and drained)
  • 1 butter lettuce washed and chopped
  • ½ cup of continental parsley

Serves 4, 5-6 grams of fibre per serve.
 
Ingredients
  • 300 grams of blueberries
  • 300 grams of cherries seeded
  • 100 grams of passionfruit pulp (2/3 cup)
  • 800 mls of coconut water
  • ½ cup caster sugar
  • 1 ½ tablespoons gelatine (for V, VG agar agar powder or flakes)
  • 300 mls of thick coconut cream, yoghurt or fresh cream

Serves 4, under 3 grams of fibre per serve.
 
Ingredients
  • 300 grams of blueberries
  • 300 grams of cherries seeded
  • 100 grams (2/3 cup) deseeded passionfruit puree – this product is not very colourful but very tasty
  • 800 mls of coconut water
  • ½ cup caster sugar
  • 1 ½ tablespoons gelatine (for V, VG agar agar powder or flakes)
  • 300 mls of thick coconut cream, yoghurt or fresh cream

Serves 4, 5 grams of fibre per serve- vegetarian option 7 grams.
 
Ingredients
  • 4 zucchinis – spiralised
  • 200 grams of lean beef, chicken, turkey or pork mince 200 grams of Kidney beans (OR 400 grams of Kidney beans if vegan, vegetarian)
  • 1 500 ml container of pasata tomato sauce
  • 3 garlic cloves
  • 1 cup grated carrot
  • 2 teaspoons of basil pesto
  • Parmesan cheese (leave out for vegan)
  • 2 low salt stock cubes (beef, chicken or vegetable)

Ingredients
  • 4 zucchinis – spiralised
  • 400 grams of lean beef, chicken, turkey or pork mince OR Tofurky ground beef (this product is 2 grams of fibre per 55 grams)
  • 1 500 ml container of pasata tomato sauce
  • 1 teaspoon garlic powder
  • 1/2 cup grated carrot
  • 2 teaspoons of basil pesto
  • Parmesan cheese (Redwood or Bellisimo vegan brand 'cheese' grated if desired)
  • 2 low salt stock cubes (beef, chicken or vegetable)
