No egg scramble (Low Fibre)

This tofu dish, is easy, tasty and fun
 
Makes 2 serves, approximately 2 grams of fibre per serve

* Vegetarian, VG
 
Ingredients
  • 1 drained package of firm tofu
  • 1 tablespoon of finely chopped flat parsley
  • 1 teaspoon of nutritional yeast
  • *½ teaspoon of dried onion
  • Olive oil spray
  • 1 teaspoon of extra virgin olive oil
  • Generous pinch each of turmeric and paprika
  • Salt and pepper to taste
Method
  1. Mix nutritional yeast, turmeric, paprika, oil, salt and pepper in a small bowl
  2. Crumble tofu into a larger bowl then mix the spices through the tofu until the colour is even (use gloves as you may end up with yellow fingers)
  3. Spray a fry pan with olive oil and heat to a medium temperature, add onion and sauté for a few minutes until cooked
  4. Add tofu and parsley until warmed through 2-3 minutes
  5. Serve with crusty warm white sourdough buns
