Manuka peach pancakes (Low Fibre)

2 pancakes each for 4 people, approximately 1- 1.5 grams of fibre per serve

  • 1 cup of milk of your choice
  • 1 free range egg
  • 2 teaspoons of baking powder
  • ½ teaspoon of salt
  • 1/14 cups of plain or Orgran ® flour
  • 1 tablespoon manuka honey (for pancakes)
  • 1 tablespoon manuka honey for fruit
  • 3 very ripe peaches or nectarines diced
  • 3 oranges peeled, pips removed and diced
  • 1 cup of plain Greek yoghurt
  1. Sift flour, salt and baking powder into a bowl until lumps are removed. Beat egg, honey and milk together and add to the flour mix until smooth.
  2. Mix fruit and honey together and set aside. Preheat a heavy bottomed pan and spray with olive oil, when warmed pour ¼ cup of mixture into the pan for each pancake. Cook each side golden brown and repeat until the mixture is finished.
  3. Take two pancakes and place on each plate divide fruit on top and add Greek yoghurt and a drizzle of manuka honey to decorate.
