- Sift flour, salt and baking powder into a bowl until lumps are removed then add the wheat chaff back into the bowl. Beat egg, honey and milk together and add to the flour mix until smooth.
- Mix fruit and honey together and set aside. Preheat a heavy bottomed pan and spray with olive oil, when warmed pour ¼ cup of mixture into the pan for each pancake. Cook each side golden brown and repeat until the mixture is finished.
- Take two pancakes and place on each plate divide fruit on top and add Greek yoghurt and a drizzle of manuka honey to decorate.
