Haloumi watermelon BBQ skewers and Notato chips - Low Fibre

Low fibre (makes 8 serves)

2-3 grams of fibre per serve, 4 grams of fibre with white crusty rolls - *Vegetarian


Ingredients

1 medium seedless watermelon peeled and cut in 3cms cubes

350 grams of haloumi cheese cut in 3 cms cubes

1 medium red onion peeled and diced in chunks

2 medium zucchini cut in 2cm slices and halved

to make two half circles

One bunch of basil leaves

Balsamic glaze


Method 

Assemble the skewers by skewering the pieces in the middle of the slices of watermelon, haloumi, basil and zucchini and repeat.
Medium heat BBQ grill and grill skewers on either side for char effect for 2-3 minutes on two sides
Place on a platter and drizzle with balsamic glaze
Serve with hot crusty rolls and notato chips

Notato chips (delicious alternative to oven potato chips)

Low fibre (makes 4 serves)

1-2 grams of fibre per serve - *Vegetarian, vegan friendly


Ingredients

7 medium radishes peeled

Spray olive oil

1/2 teaspoon of garlic powder

½ teaspoon of cumin

Grind of Himalayan salt and fresh black pepper to taste


Method

Pre heat the oven to 220C
Finely slice the peeled radishes into thin slivers
Place them in a bowl add garlic powder, salt, cumin and black pepper and spray with olive oil Mix thoroughly until the radishes are coated
Place on an oven tray with no overlapping areas so they can crisp easily
Bake for about an hour until they are crisp and golden
Cool and serve
