Greek spinach pie (High Fibre)

Serves 6-8, 8 grams of fibre per serve.
 
Ingredients
  • Two bunches of English spinach washed and chopped into small pieces
  • One brown onion peeled and chopped
  • 1 crushed garlic clove
  • 1 tablespoon of extra virgin olive oil
  • Olive oil spray
  • 250 grams of feta crumbled
  • 3 eggs lightly beaten
  • Salt and pepper to taste
  • 6 sheets of filo pastry
 
Method
  1. 21cms square baking dish
  2. Preheat oven to 180C
  3. Heat oil in the fry pan and add chopped onion and garlic until soft
  4. Add spinach and stir through until spinach has wilted, remove from heat and set aside in a sieve to drain
  5. Lay 6 sheets of filo pastry on a flat surface, take off the top layer and lay aside, spray with a light spray of olive oil and place another layer on top. Repeat until three sheets are on top of each other, place in a dish allowing the pastry to overhang the edges
  6. Repeat spraying and layering of the last 3 sheets of filo and set aside
  7. Mix together the spinach mix, feta and eggs gently combining and season with salt and pepper, place in dish on top of filo
  8. Lay the three filo layers set aside on top of the dish and fold the edges in toward the pie centre, ensuring all edges are folded in and no mixture is showing.
  9. Lightly spray with olive oil and bake until golden brown 20-30 minutes
  10. Serve with a green salad
