Fluffy Pancakes (Low Fibre)

Makes 8 pancakes
  • 1½ cups of plain flour or Orgran® gluten free flour
  • 1 tablespoon of brown sugar or honey
  • ½ teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1 egg (beat well)
  • 1½ cups of full fat milk or soy milk
  • Olive oil to grease pan
  1. Mix flour of your choice honey, baking soda and baking powder
  2. Pour in milk of your choice and beaten egg stir until mixture is smooth
  3. Heat a large pan and coat with olive oil.  Drop batter in large spoonful into pan covering base of the pan
  4. Cook until bubbles form and the edges are dry
  5. Flip pancakes and cook until browned (about a minute either side)
  6. Repeat with remaining batter
  7. Serve with apple or pear puree and a dollop of plain yoghurt
