Ingredients - Dressing
- 1 tablespoon of fresh thyme leaves
- 4 tablespoons of extra virgin olive oil
- 1 tablespoon of Dijon mustard
- 4 tablespoons of lemon juice
Method
- Place all salad ingredients into a bowl
- Shake dressing ingredients in a tight clean glass jar until they are well blended
- Pour dressing over the salad ingredients and gently mix through
- Serve with crusty wholemeal wholegrain warm bread
